This yeast from the Pasteur Institute is designed to produce sparkling wines and accordingly tolerates high levels of alcohol. It is hence useful for restarting stuck fermentations or making dessert wines. It ferments well in the 12-30 degrees C range. The sulphur dioxide level should be kept below 25ppm.
Gervin yeasts have been selected from the active dried yeasts currently available to commercial winemakers, and exhaustively tested to ensure that they will perform well under the conditions used by amateur winemakers. The wines that each yeast produces has been evaluated by members of the National Guild of Wine and Beer judges. The yeasts are sealed in triple foil sachets under nitrogen or carbon dioxide gas to ensure a long shelf life.
