Gervin No.4 - High Alcohol - White on Purple Label - Strain GV4
Very tolerant to high levels of alcohol. Levels up to 21 % can be achieved with musts with high levels of nutrient. Gives a fast ferment, with little foam, and settles well. Also excellent for full-bodied wines and dessert wines. Has a killer factor that may inhibit "wild" yeasts.
Gervin yeasts have been selected from the active dried yeasts currently available to commercial winemakers, and exhaustively tested to ensure that they will perform well under the conditions used by amateur winemakers. The wines that each yeast produces has been evaluated by members of the National Guild of Wine and Beer judges. The yeasts are sealed in triple foil sachets under nitrogen or carbon dioxide gas to ensure a long shelf life.
