Citric Acid occurs naturally in most fruits and is the most popular single acid. It is simple to use and has a pleasant fruity flavour. May be carefully added to country wines to create an attractive flavour in otherwise low acid flat wines.
Should a wine lack acid it will taste medicinal and be ruined. If there is a small amount of acid, the wine will taste flat and lifeless whilst too much acid makes a wine sharp and sour to the taste. Acid is also necessary to produce a good bouquet in the wine because it reacts with the alcohol to produce chemical compounds called esters. It is these esters which are mainly responsible for produving the bouquet. The correct acidity is also important as yeast needs an acidic environment to effect fermentation and an acidic environment helps to reduce the activity of unwanted organisms like bacteria so helping preserve the wine.
